Grilled Churrasco

Ingredients

  • 1 cupExtra virgin olive oil
  • cupDistilled white vinegar
  • cupCold water
  • ½ cupChimichurri/Churrasco seasoning
  • lbsCenter cut beef tenderloin
  • Crushed fresh garlic
  • Fresh parsley and/or mint

Instructions

    Mix seasoning with oil, vinegar, and water into paste.

    Add garlic, parsley, and mint.

    Cut tenderloin into 4 flat pieces and pound flat.

  4. 4

    Marinate 30 minutes with sauce, covered and refrigerated.

    Heat grill to high; oil grates.

  6. 6

    Grill 2-3 minutes per side for medium-rare, rotating for grill marks.

  7. 7

    Spoon remaining marinade alongside.
