- 1 lbItalian sausage
- ½ lbPancetta
- 12 tbspOlive oil
- 12 tbspButter
- 1 lbSpaghetti or fettuccini
- Basil, Oregano, Parsley
- Onion, Carrots, Celery, Garlic
- Tomatoes, Tomato paste
- Beef stock, White wine
- Parmesan cheese

Heat stock pan with oil and butter; sauté vegetables until soft.

Add pancetta until fat renders.

Add ground meats; season with salt, pepper, red pepper flakes. Cook 5 minutes.

Add tomato paste until meat browns.

Deglaze with wine; add stock, tomatoes, and herbs.

Simmer 30+ minutes.

Cook pasta meanwhile.

Before serving, stir in 2 tbsp butter for creaminess.
